Box jumps and I are not friends. They make me want to die. Def threw up in my mouth a little again today. Booo!!!!

Avocado Tuna Tartare

 

  • 1 6-ounce ahi tuna steak
  • 2 tablespoons extra-virgin olive oil
  • 1 large avocado, peeled, pitted, diced
  • 1 serrano chile or jalapeño chile, seeded, deveined, minced
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup chopped green onions (and/or chives…I like both)
  • 1/4 cup fresh lime juice
  • 1 tsp cayenne pepper
  •  
    Directions:

    Brush tuna with some of the olive oil and sprinkle with salt and pepper. Place in skillet and sear until brown on the outside and almost opaque in center, about 2 minutes per side. (I like to under cook this a little bit so that the lime juice can finish “cooking” the tuna, like it would in a ceviche.  If you want to cook a little more, cook for 3 minutes on each side).  Cool tuna; dice finely. Combine tuna, remaining oil, and all remaining ingredients in medium bowl. Using fork, mix just to blend. Season tartare to taste with salt and pepper and chill.

    Serve with plantain chips.

    First WOD after a month and a half hiatus. Feels awesome to be back…my whole body hurts!! 🙂

    3/11 Rock Climbing

    Went rock climbing with Bern tonight from 7:00-9:30 pm.

    3/8 Rock Climbing Belay Certification Test

    Took the belay certification test tonight at 7pm and PASSED!!  Yippy!!

    Climbed for a few hours after with Emily and Clayton.  (7:00-9:30pm)

    3/6 Rock Climbing Beginner Course

    Went to Alexandria Sport Rock and took the Beginner climbing course with Clayton and Emily.  The class was pretty boring, but the climbing part is awesome!!  Way more fun that I imagined it would be and FAR more difficult than I would have guessed.

    Course was from 12:00-2:00 and then we climbed for about an hour and a half afterwards.  Felt nice to do something active since I’m on hiatus from CF for a bit longer.

    I will def go climbing again!!
